Functions HACCP team
The following functions are represented in the HACCP team: quality management, technical management, production, and development.
The team leader has sufficient knowledge of HACCP principles and food safety and may also be an external advisor.
Th expertise of the team leader can be evidenced by:

- Evidence of education or training through relevant courses.
- Demonstrable extensive experience in implementing HACCP plans or providing training.
Tasks, responsibilities, and authorizations HACCP team
Production manager
- Guaranteeing food safety, implementing improvements, consulting with management, and providing training to staff.
- Responsible for the daily activities and instructions to the staff.
- All daily activities, the implementation of direct improvements, and requesting quotes.
- Knowledge of products, processes, equipment, and hazards.
Technical service
- Guarantee food safety, implement improvements, and carry out checks on the machines / appliances with regard to food safety.
- Responsible for the daily work and checks on the machines / appliances.
- All daily activities and requesting quotes.
- Knowledge of production resources, appliances, measuring tools, lubricants, food contact materials, hygienic design.
Quality employee
- Directs the HACCP team.
- Monitor and guarantee food safety and implement improvements.
- Responsible for day-to-day operations and controls regarding food safety.
- All daily activities and requesting quotes.
- Knowledge of legislation and standards regarding food safety and quality.
- Knowledge of HACCP and the quality management system and implementation of results from the HACCP team consultation.
